Italian Sausage Soup and rolls

This was a new one. Very yummy!

1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach - packed, rinsed and torn
1/4 teaspoon ground black pepper
1/4 teaspoon salt
Directions
In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.

Squash Ravioli with Olive Oil and Basil

Another attempt to get Kirk to eat squash. This one worked. This was super yummy.
I just sautéd the cubed squash with onion and garlic and filled wonton skins.

The brussels sprouts left something to be desired but anytime I can get Kirk to eat a vegetable he hates, it's a victory.

Thanks for hanging with me even though I seem to have abandon this blog. This summer has been crazy! I hope to be back for good.

I saw this recipe on Paula Dean and I just had to try it! I it was delish! I wasn't paying that much attention when I watch and I went shopping without the recipe so I had to change a few things like using a flour tortilla. You should definitely try it!

Spaghetti

This is my standby recipe. I ALWAYS have the ingredients on hand. It's pretty basic, just an onion chopped, a bell pepper chopped, a couple cloves of garlic, 1 lb ground beef, a bottle (or can) of whatever sauce is on sale, a couple tbsp sugar and lots of pepper.
When I met Kirk he told me he hated spaghetti, now it's one of his favorites. It must be ok.

Macaron Failure

I decided to try making macarons. I haven't ever had one before so I didn't really even know what to compare mine to but I had to try it. I started with this recipe. I started out great...



I should have ground up the almond flour more here...I didn't do that...oops


This is where I should have added the food coloring...I didn't...ooops

I should have boiled the syrup down more...I didn't...ooops ( I threw away this batch of meringue and started over)


I should have used parchment paper...I didn't...ooops



hmmm....I don't think this is how they should look.


I should have beat the egg yolks more...I didn't oops (but even with this being too runny it was SOOO GOOD)

Not the prettiest little cookie but man, they are good! We'll have to try again.

Filosoof and green salad

I saw this recipe in the Worldwide Ward Cookbook. It sounded intriguing but it was pretty blah. It was sauteed onions, chopped apples, pinto beans, ground beef, and topped with mashed potatoes and a little butter.
I won't be making it again.

Creme brûlée

I bought these super cute ramekins at the dollar store. Kirk said that he didn't think I'd use them so I had to prove him wrong! This recipe was so easy and so yummy!

Brownies

I saw this recipe (if you can even call it a recipe) on a blog and HAD to try it. I can't even remember which blog it was.

Start by making regular brownie mix as directed on the package




Then you'll need 3 large candy bars. On the blog I saw this on, she said she used all Symphony bars. But they weren't on sale and the others were so I thought I'd mix things up


pour half of the brownie batter in a 9x13 pan and top with the candy bars





Pour the remaining batter over the top of the candy bars and bake as directed on package ( I cooked mine the longest time listed and they turned out perfect)


Enjoy! I have to say that the coconut ones were my favorite followed by the Symphony and no one thought the Butterfingers were that great. I will make these again for sure!
